Random food I made Wk1

Breakfast 

Work can get busy, so more snack type foods work better for lunch. Bowl has Chex cereal –unsweetened, plain-, figs, almonds and peanuts. I like to add salty cheddar flavored rice crackers, and bits of cut up dark chocolate. But we were out. However, the gluten free bar on the left was fantastic! First time I tried them, and I’m hooked.

 

Dinner 

Spinach, tomatoes, blueberry salad with pomegranate infused balsamic vinegar and a splash of olive oil.

Dinner

Udi’s gluten free pizza, with some kale I added on top. Super yummy!

Lunch

Cooked zucchini with seasoning, with an egg (it was meant to be in the shape of a heart, but it was a fail, haha) with basil on top. Made some homemade guacamole with avocado, tomatoes, sprinkle of Hidden Valley gluten free ranch packet, lemon juice, and some hot sauce. And a warm cup of unsweetened almond milk (Silk) with a splash of coffee.

 

Lunch

Yes, I was in an egg and avocado mood this week…also, avocadoes were on sale. Guacamole again, but I added some plain Greek yogurt to it. And obviously, two hard boiled eggs.

Now, this isn’t the only food I made obviously. However, this was what I had a chance to take a photo of.
